Coffee Collagen Mug Cake

Ingredients:

  • 1 scoop coffee-flavored collagen
  • ¼ cup almond flour (or all-purpose flour)
  • ½ tsp baking powder
  • 1 tbsp cocoa powder (for a mocha flavor, optional)
  • 1 tbsp maple syrup or honey
  • 2 tbsp milk of choice
  • 1 tbsp melted coconut oil (or butter)
  • ½ tsp vanilla extract
  • 1 egg (or flax egg for vegan option)

Instructions:

  1. In a microwave-safe mug, whisk together collagen, flour, baking powder, and cocoa powder.
  2. Add in maple syrup, milk, melted coconut oil, vanilla, and egg, and mix well until smooth.
  3. Microwave for 60-90 seconds, or until the cake rises and is set in the middle. (Check at 60 seconds and add more time if needed.)
  4. Let cool for a minute, then enjoy straight from the mug or topped with whipped cream!
