ingredients

  • 1 ½ cups (190 g) all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup (200 g) granulated sugar

  • ½ cup (120 ml) unsalted butter, melted & slightly cooled

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup (120 ml) buttermilk

  • 2 scoops (≈ 20 g) Crushed Tonic Coffee Arabica Roast Collagen

directions

  1. Preheat + prep.
    Heat oven to 350 °F / 175 °C. Grease or line an 8 × 8 inch pan with parchment.

  2. Mix dry.
In a bowl, whisk flour, baking powder, baking soda, salt, and Coffee Collagen.

  3. Mix wet.
In another bowl, beat sugar and melted butter until creamy. Add eggs one at a time, then stir in vanilla.

  4. Combine.
Alternate adding dry mix and buttermilk, starting and ending with dry. Mix gently until just combined—don’t overmix.

  5. Bake.
Spread batter evenly in pan. Bake 25–30 min or until a toothpick comes out clean.

  6. Cool + serve.
Let cool 10 min, then transfer to a rack. Slice and enjoy warm with coffee or tea.

why you’ll love it

  • Glow-from-within cake: A sweet treat that secretly boosts skin health.

  • No flavor compromise: Collagen adds nutrients, not taste.

  • Café comfort: Pairs perfectly with your morning latte.

  • Protein-powered indulgence: Balanced between cozy and functional.

make it yours

  • Add crumble: Mix brown sugar, cinnamon, and butter for a streusel topping.

  • Frost lightly: Drizzle with a glaze of powdered sugar + milk.

  • Dairy-free version: Use coconut oil and almond milk + lemon juice instead of butter and buttermilk.

pro tips

  • Use room-temperature eggs and milk for a smoother batter.

  • Don’t skip buttermilk — it’s key for a tender crumb.

  • Store leftovers airtight up to 3 days or freeze slices for quick breakfasts.
